What we are eating this week
Stuck and needing some inspiration for what to cook this week, no problem!!
Meal planning is one of my favorite things to do!! I love having a plan going into the week. It’s helped us to stay on a budget big time and it ensures that we are fed! Sometimes my kids don’t like what I make but… I don’t care. They get to eat it! haha!!
I am setting it up like a typical Faster Way to Fat Loss week for you as well to make things easier! I will work on posting some snack and lunch ideas as well!
Monday: Carnitas Tacos
I just serve with:
-Corn Tortillas
-Sour Cream
-Coleslaw
*For low carb you could just do coleslaw and meat and no tortilla.
Tuesday: White Chicken Chili
*I serve with Cheese and Avocado!
Wednesday: Insta Pot some Baked Potatoes
*Put the rack in your IP. Add about 1/4 cup of water. Scrub and poke your potatoes. Put them in. I usually make 6-8 bc my kids love potatoes and we eat them for lunch during the week. I do somewhere between 14-15 minutes and then let them stay on low pressure 10 minutes then release!*
(you can also do sweet potatoes)
+ BBQ Slow Cooker Chicken (chicken breast + BBQ sauce in the slow cooker easy peasy!)
Roasted Veggies (I will probabably do a mixture of carrots, tomatoes, brussel sprouts and whatever else I can find in my fridge). OR if I get lazy a simple salad.
Thursday: V-Day Date night out!
Friday: Tri- Tip from CostCo
*We have found that searing it for 1 minute on each side on the grill then 20 minutes on each side over indirect heat make the PERFECT tri-tip!!
(this is a PERFECT low carb day meal. I like to normally do it on Mondays and eat it on a Bowl Tuesdays!)
Roasted Veggies (again)
Salad with butter lettuce and romaine, avocado, tomatoes and maybe some roasted nuts from Trader Joe’s.
(for the kids Ill probably do some corn because they love it with this meal!)
